Winter Warmer- Indian Masala Chai Recipe

Serves 3


  • 1/2 tsp ground cinnamon or 1/2 a cinnamon stick

  • 1/2 tsp ginger powder

  • 4 cardamom pods

  • 3 cloves

  • 3 pepper corns

  • 2 tsp loose black tea or 2 teabags

  • 3 tsp raw sugar (unrefined)

  • 2 cup water

  • 1 cup milk- preferable unhomogenised organic/biodynamic milk


Roughly pound the cardamom, cloves and peppercorns in a mortar and pestle.

Pour water in a saucepan and bring to the boil on a medium-high heat, add the ground spices to water along with the ginger and cinnamon.

Wait a one minute and add black tea and sugar. Stir.

Wait another minute and add milk. Stir and remove from heat.

Leave to stand for 3 mins and then pour through a strainer. Serve hot.
